Sunshine Tropical Fruit Salad
Aren’t the cheerful, vivid colors of this fruit salad beautiful? Anytime you’re having company over and don’t know what to make for dessert, make a fruit salad. Not only is it so much easier than baking something, it’s healthy and always guarantees a stunning presentation.
Most fruit salads can’t be made more than a few hours in advance. Fruit may have some great qualities, but unfortunately, most of it ages gracelessly and ridiculously fast. Cut up an apple or a banana, and they will be brown in no time. Slice up some strawberries, toss in some raspberries, and you will have a droopy, soggy salad before you know it.
This fruit salad is an absolute dream to work with. You can make it in advance and it will still be just as crisp and beautiful as the moment it left your cutting board. I am not kidding you, I was eating this salad for a WEEK and it was still in absolute perfect condition, both taste and texture. That means you can make a big bowl of it at the beginning of the week, portion it out into small cute mason jars that are all the rage nowadays, and you can add it to your lunchbox all week long. How awesome is that?
Ingredients:
2 cups chopped fresh mango
2 cups chopped fresh pineapple
6-8 oz blueberries
4 kiwis, peeled and chopped
simple syrup, if needed (1/2 cup sugar, 1/4 cup water)
Instructions:
Chop the mango, pineapple and kiwis.
Place all the chopped fruit as well as the blueberries in a large bowl. Mix to combine. If your fruit is very ripe and sweet, you won’t need any additional sugar. However, if your fruit isn’t sweet enough, make a simple syrup by boiling the sugar and water in a small saucepan until the sugar melts. Cool the syrup and add as much as needed.
Store the fruit salad in the refrigerator.

Thanks, that’s a really good recipe, not overloaded and basically would work with almost anything added “impulsively “, what I often do with recipes. This time I added homemade raspberry syrup when serving, not just to add sweetness (not fond of simple syrup ) but also to pretty up the serving glasses I used. It looked and tasted incredible. Another clever way to incorporate fruits in my boys’ diet!
