Cauliflower Tomato Salad

- 1/2 cauliflower head
- 1-2 whole tomatoes or 1/2 - 3/4 of a pint of cherry tomatoes
- fresh herbs: parsley, dill, green onions (1/2 Tablespoons each, or to taste)
- 1 small garlic clove, minced
- 3-4 Tablespoons mayo and sour cream, each
- salt, ground black pepper, to taste
Instructions
- Grate the cauliflower on the large holes of a box grater.
- Seed and chop the tomato(es). (If you're using cherry tomatoes, cut them in half or quarters.
- Add the rest of the ingredients (garlic, fresh herbs, mayonnaise, sour cream, salt, pepper) and mix to combine.
- Serve the salad. You can make it up to a few hours in advance, store it in the refrigerator. Leftovers will stay fresh for up to 3 days.
