One of my favorite summer salads is this Strawberry Spinach salad with avocados, toasted almonds and a sweet and tart balsamic dressing. All the components go so well together.

1 box/bag baby spinach (10–12 oz)
1/2 – 1 lb fresh strawberries, sliced
1–2 avocados, cut into slices or cubes
1/4 cup toasted almonds
1 large shallot or half of a red onion, thinly sliced
Balsamic Mustard Dressing:
1 Tablespoon dijon mustard
1 garlic clove, grated or minced
1 1/2 Tablespoons honey
2 Tablespoons balsamic vinegar
3 Tablespoons olive oil
1 Tablespoon lemon juice
salt, pepper, to taste
Instructions
Make the dressing first. Grate the garlic on a microplane grater and put all the ingredients into a small mason jar, the mustard, garlic, honey, balsamic vinegar, olive oil and lemon juice. Shake the mason jar to combine all the ingredients into a creamy dressing. You can also whisk all the ingredients in a medium bowl. Season to taste with salt and pepper.
Toast the almonds and set aside to cool.
Slice the strawberries, avocado and shallot.
Place the spinach into a salad bowl and top with strawberries, avocados, shallot and almonds.
Drizzle the salad with balsamic dressing. Serve right away.
