One of my favorite summer salads is this Strawberry Spinach salad with avocados, toasted almonds and a sweet and tart balsamic dressing. All the components go so well together.

Ingredients

Scale
  • 1 box/bag baby spinach (10-12 oz)
  • 1/2 - 1 lb fresh strawberries, sliced
  • 1-2 avocados, cut into slices or cubes
  • 1/4 cup toasted almonds
  • 1 large shallot or half of a red onion, thinly sliced

Balsamic Mustard Dressing:

  • 1 Tablespoon dijon mustard
  • 1 garlic clove, grated or minced
  • 1 1/2 Tablespoons honey
  • 2 Tablespoons balsamic vinegar
  • 3 Tablespoons olive oil
  • 1 Tablespoon lemon juice
  • salt, pepper, to taste

Instructions

  1. Make the dressing first. Grate the garlic on a microplane grater and put all the ingredients into a small mason jar, the mustard, garlic, honey, balsamic vinegar, olive oil and lemon juice. Shake the mason jar to combine all the ingredients into a creamy dressing. You can also whisk all the ingredients in a medium bowl. Season to taste with salt and pepper.
  2. Toast the almonds and set aside to cool.
  3. Slice the strawberries, avocado and shallot.
  4. Place the spinach into a salad bowl and top with strawberries, avocados, shallot and almonds.
  5. Drizzle the salad with balsamic dressing. Serve right away.
