Spice Rubbed Flank Steak-1-10I’ll let you in on a little secret. This weekend this girl right here, (yes, I mean myself) will be cooking for 200 guests at a wedding. My brother, Valentin is getting married this Saturday! We are SO excited.

This past month has been just a tad bit crazy. I’ve been writing out the menu, grocery list, perusing the aisles of many grocery stores, prepping a few hundred pounds of meat, and communicating back and forth with the other ladies who will be cooking. This coming week has a detailed schedule for each day.

It can be somewhat overwhelming, especially with a little boy who needs my attention and still having to put in my normal hours as a nurse at the hospital. With all this commotion, you can imagine that there’s not much time left for cooking. I’ve been preparing extremely simple meals, utilizing my oven as much as possible and focusing on dinner options that have as little prep as possible.

This flank steak was one of these dinners. Super easy, super fast and super yummy. With 5 minutes of prep and the oven doing the rest of the work, this steak turns out so juicy and moist, and will knock your socks off. The spice rub gives it a really great punch of flavor. Served with rice and the Balsamic and Soy Vegetable Medley that I shared with you already, this is a stunning and impressive dinner but can be easily made even in the most of a hectic schedule. 

Ingredients:

1 1/2 lbs flank steak

salt, pepper

1 teaspoon chili powder

1/2 teaspoon coriander

1 teaspoon paprika

1 teaspoon dry mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/4 teaspoon cayenne pepper

2 Tablespoons oil

Instructions:

Preheat the oven to 500 degrees and place a large rimmed baking sheet to heat up in the oven while it’s preheating.

Spice Rubbed Flank Steak-1-11Blot the steak dry with a towel and season it with salt and pepper on both sides.

In a small bowl, combine all the spices. Spice Rubbed Flank Steak-1-12Rub both sides of the steak with the spice rub. You will have some of the spice rub left.

Spice Rubbed Flank Steak-1-13When the oven is preheated, take out the searingly hot baking sheet and pour 2 Tablespoons of oil on it, tilting the sheet to spread the oil around or use a heat proof brush to disperse it all over the surface of the baking sheet.

Place the steak on top of the hot pan and return to the oven. Spice Rubbed Flank Steak-1-14Roast for about 15 minutes. Remove the steak from the oven and let it rest for at least 10 minutes. Slice the steak thinly, across the grain.

      Hi Anna, No there isn’t a different way to cook it. If you cook it at a lower temperature, the beef will be gray and will not sear properly and won’t be golden brown. You will have to cook it longer at a lower temperature and just won’t get the same results. Of course, you can grill the steak at a high temperature as well. That would be even better.

    I have tried making this steak “in 15 min” twice and was not successful both times.. It takes me an hr to have it well done.I have done every step exactly like you have and still. First time burnt the blyashka that the fire alarm went off lol. I do have a gas stove if that makes a difference

      I don’t like to cook steaks until they are well done, Alona. I also always use an instant read thermometer whenever I cook meat to make sure I have the correct doneness that I am looking for.

    I had a terrible experience with cooking this! My entire oven is splattered with oil from the steak and the oil was burning! Smoke all over the house! Oven is not a good way of making it

    My husband & I really enjoy the steak prepared this way; however, I’d like to ask for advice. Although we have a new oven, every time I prepare the steak, the oil/grease splatters all over & there’s a burnt scent. I do not think this happens because the oven does not work properly. What can I do to prevent that? I do cover the bottom of my oven with aluminum foil. May I cover the steak with foil as well? Thanks for your help!

      Unfortunately, there’s no way to prevent the grease splatters when you make steak, Irina. Whether you’re doing it on the stovetop or using the broiler, it’s a messy process. In order for the steak to get a really great sear, you need it to be in contact with a lot of heat, so if you cover it up, you won’t get that sear and the steak will look gray. My rule of thumb is to wait until my oven is already messy, so I don’t feel too bad making it look so greasy and then I clean it shortly after and has to be done anyway, so at least I got some nicely seared steaks out of it:).
      It’s really best to do steaks on the grill, but I know when I lived in an apartment for 8 years that it’s not very possible all the time, so this is at least this recipe gives you the option to use your oven.
