3 lbs potatoes, diced into cubes

1 large onion, finely chopped

3 Tablespoons oil for potatoes and 1/2 Tablespoon oil for the onion

3/4 teaspoon salt, 1/2 teaspoon ground black pepper

1/2 - 1 teaspoon each, onion powder, garlic powder, paprika, seasoning mix such as Trader Joe's Onion Salt or an all purpose dry herb mix

1 Tablespoon fresh herbs, such as green onion, parsley, rosemary, thyme, chives, dill

Instructions

  1. Preheat Oven: Preheat your oven to 425°F. Place an extra-large rimmed baking sheet inside to heat up.
  2. Prepare Potatoes: Peel and dice the potatoes into small cubes.
  3. Season Potatoes: In a large mixing bowl, combine the diced potatoes with oil, salt, ground black pepper, and any dry spices you like (such as onion powder, garlic powder, and paprika). Toss well to coat.
  4. Spread on Baking Sheet: Once coated, spread the potatoes evenly on the hot baking sheet.
  5. Bake: Bake in the preheated oven for 18-20 minutes. (Adjust time if your potato pieces are larger.)
  6. Prepare Onions: While the potatoes bake, finely chop the onion and mix it in the same bowl with a bit more oil, salt, and pepper.
  7. Flip Potatoes: After the initial baking time, remove the potatoes and flip them.
  8. Add Onions: Create a space in the center of the baking sheet and add the onions in a pile. This will help them sauté and steam.
  9. Continue Baking: Return the baking sheet to the oven and bake for another 10-20 minutes, until the onions are tender and the potatoes are crispy and golden.
  10. Serve: Mix the potatoes and onions together, garnish with fresh herbs, and enjoy your perfect breakfast potatoes!
