Ingredients:
1 ½ lbs flank steak
salt, pepper
1 teaspoon chili powder
½ teaspoon coriander
1 teaspoon paprika
1 teaspoon dry mustard
1 teaspoon garlic powder
1 teaspoon onion powder
¼ teaspoon cayenne pepper
2 Tablespoons oil
How to Cook Flank Steak in the Oven
Preheat the oven to 500 degrees and place a large rimmed baking sheet to heat up in the oven while it's preheating.
Blot the steak dry with a towel and season it with salt and pepper on both sides.
In a small bowl, combine all the spices. Rub both sides of the steak with the spice rub. You will have some of the spice rub left.
When the oven is preheated, take out the searingly hot baking sheet and pour 2 Tablespoons of oil on it, tilting the sheet to spread the oil around or use a heat proof brush to disperse it all over the surface of the baking sheet.
Place the steak on top of the hot pan and return to the oven. Roast for about 15 minutes. Remove the steak from the oven and let it rest for at least 10 minutes. Slice the steak thinly, across the grain.

Does the cooking time change if the steak is smaller or larger than 1 1/2 lbs?

My husband & I really enjoy the steak prepared this way; however, I'd like to ask for advice. Although we have a new oven, every time I prepare the steak, the oil/grease splatters all over & there's a burnt scent. I do not think this happens because the oven does not work properly. What can I do to prevent that? I do cover the bottom of my oven with aluminum foil. May I cover the steak with foil as well? Thanks for your help!
Unfortunately, there's no way to prevent the grease splatters when you make steak, Irina. Whether you're doing it on the stovetop or using the broiler, it's a messy process. In order for the steak to get a really great sear, you need it to be in contact with a lot of heat, so if you cover it up, you won't get that sear and the steak will look gray. My rule of thumb is to wait until my oven is already messy, so I don't feel too bad making it look so greasy and then I clean it shortly after and has to be done anyway, so at least I got some nicely seared steaks out of it:).
It's really best to do steaks on the grill, but I know when I lived in an apartment for 8 years that it's not very possible all the time, so this is at least this recipe gives you the option to use your oven.
I had a terrible experience with cooking this! My entire oven is splattered with oil from the steak and the oil was burning! Smoke all over the house! Oven is not a good way of making it

I have tried making this steak "in 15 min" twice and was not successful both times.. It takes me an hr to have it well done.I have done every step exactly like you have and still. First time burnt the blyashka that the fire alarm went off lol. I do have a gas stove if that makes a difference
I don't like to cook steaks until they are well done, Alona. I also always use an instant read thermometer whenever I cook meat to make sure I have the correct doneness that I am looking for.

Just cook it longer, Lana. However, the steak will be much tougher, so I just have to give you a fair warning.

No, turning it is not necessary, and if you do, your steak will not get a nice sear.
I haven't personally prepared the flat iron steak using this recipe, but you can give it a try.

Hi Anna, No there isn't a different way to cook it. If you cook it at a lower temperature, the beef will be gray and will not sear properly and won't be golden brown. You will have to cook it longer at a lower temperature and just won't get the same results. Of course, you can grill the steak at a high temperature as well. That would be even better.
