Cranberry Raspberry Mors (Drink) – Клюквенно-Малиновый Морс
I don’t know about you guys, but this time of year, every square inch of my refrigerator, pantry or freezer is as precious as gold. I’m trying my best to move things around, make room for this or that. It’s such a fine line of trying to get as much of the holiday dishes done ahead of time as possible, and not having any more room. AT ALL. I then have to call Sergi, who is the packing genius, he works his magic and somehow manages to squeeze it all it. It gives me a thrill to throw out an empty egg carton or use up one thing or another. Ha ha.
In the spirit of trying to save you some room, I am offering up a drink that is made into a very concentrated syrup and then you dilute it with water or carbonated water, and thus, you have TWICE as much space left in your refrigerator. Mors is a Russian non-carbonated drink, usually made from cranberries, huckleberries or any other berries. Cranberries and raspberries are one of those combinations that are such a perfect match – tartness and sweetness. This is one of my favorite drinks. Gorgeously rosy, refreshing and you can control the sweetness and flavor, adding as much sugar or water as you like and substituting the berries to whichever ones you prefer – cherries, blueberries, strawberries, etc. 3 (12 oz) packages cranberries (36 oz TOTAL), fresh or frozen
24 oz raspberries, fresh or frozen
1 gallon plus 1 quart water
4 cups sugar
Water or seltzer water to dilute the drinks.
Combine the cranberries and raspberries in a large pot.
Add the sugar and water. Bring it to a boil, reduce to a simmer and cook for approximately 30 minutes – 45 minutes, until the fruit is mushy and foamy on top. The cranberries will “burst”. Discard the cooked berries.Strain the liquid through a fine mesh sieve lined with a paper towel or a cheesecloth. The mixture should be very concentrated and sweet. I don’t like my drinks too sweet, so if you prefer your drinks on the sweeter side, you may want to add more sugar. Cool.
I usually store the concentrate in 2 liter canning jars. You will have approximately 5 1/2 liters of concentrate. When you’re ready to serve, dilute the concentrate with water or seltzer water. You can also add some mint.

Looks delicious !!!!! Can’t wait 😉 and I agree about the space in the fridge 🙂

I know, Alla! It seems like my refrigerator shrinks around the holidays, but is nice and roomy the rest of the year:).
Tatianna
Hi Olya,
I was wondering, about how much water or seltzer water do you dilute it with?
olgak7
Tatiana,
It depends on how sweet or tart you like it. I like mine on the tart side, so I dilute it at least half as much water, sometimes even more. Most people like it sweeter though, so use your taste buds.
Tatianna
Out of curiosity, would it taste alright if I made it with honey instead of sugar just to be on the healthier side?
olgak7
It’s up to you, Tatiana. Try it out. I wouldn’t, but that’s just me. You may like it.
katya
i love this drink!! i do it every week! but i got a quick question can we put blueberries, raspberries, cranberries, blackberries and alot of other beries too? would it taste better or worse
olgak7
Hi Katya,
I don’t know your taste buds, so I don’t know what flavor you would prefer. I make mors using many different combinations and I like them all in their own way.
Oksana Babich
This was absolutely delicious!!! Thanks!!!
Duffie
How long can Mors be refrigerated in a jar?
olgak7
I would say about a week, Duffie.
Tatianna
Hi! Do you know if strawberries would taste good instead of raspberries?
olgak7
You can use any berries or fruit.
viki
Thank you Olga. Amazing stuff.

What’s the difference between “mors” and “kompot”.
olgak7
Hi a dude!
Glad to have you stop by. Kompot is made from cooked fruit and can be served warm or cold. Mors is usually a syrup that you dilute with water and is always served cold. Mors can be made with fresh fruit or cooked fruit, and usually involved something tart, like cranberries, raspberries, currants, etc.

Thank you for the recipe! This might be a silly question, but does the concentrate have to be refrigerated at all times?
olgak7
Definitely! I make a large batch and store it in the refrigerator. I actually have some in my refrigerator right now:).
herb24
How long does the concentrate stay edible when stored in jars in the refrigerator? Thanks.
Janet
This is my favorite flavor of Mors and it’s difficult to locate from the U.S.
Thanks for this recipe, I can’t wait to try it…I have cranberries and raspberries on hand currently so perfect timing!
olgak7
I’m glad you were able to find the recipe on my website, Janet. It’s one of my favorite flavor combinations too:).
Ian Mathers
Hi. My teenaged son found this and he and his mom made some for our Christmas dinner. Excellent flavour and brilliant colour. We added the cranberry pulp to the turkey stuffing.
olgak7
That’s awesome, Ian! I’m glad to hear that you enjoyed it.
Anitra
That’s not even 10 miteuns well spent!
olgak7
I agree:). With so little effort and time, you get such a tasty drink.
Elza
Hi, do you think it can be canned? Have you tried to can it? that would definitely save room in the fridge, make more of it and you can have it anytime you need it.
olgak7
Hi Elza,
I have not tried canning it, so I am not sure. I usually make enough for us to drink in a few days. It’s so simple to make, that I can easily make more from fresh or frozen fruit or berries any time and save space that way, by having fruit and berries stored in my freezer.
